Zehr's Fares: Vegan Crumble Bars

Yield: 16 - 24 bars

 

Ingredients:

  • 2 cups (250 grams) all purpose flour * 

  • 2 cups (160 grams) rolled oats

  • ½ tsp salt

  • 1 ¼ cups (250 grams) light brown sugar

  • 1 ¼ cups (280 grams) cold vegan butter **

  • 2 tsp vanilla extract

  • 5 - 6 medium apples 

  • 4 tsp cinnamon divided 

 

Method:

  1. Gather ingredients and preheat oven to 350 ℉.

  2. Spray a 13 x 9 inch pan with cooking spray then line with parchment paper.

  3. Peel apples then cut into ¼ inch thick slices.

  4. Place cut apples in a medium sized bowl and toss with 2 tsp cinnamon

  5. Get a large bowl and whisk together your flour, oats, salt, sugar, and cinnamon until well incorporated.

  6. Cut the cold vegan butter into small cubes and add them into the flour mixture. using a fork, or clean hands, rub the butter into the flour mixture until you’ve achieved a nice crumbly consistency.

  7. Add in the vanilla extract and mix until dispersed.

  8. Remove 1 ½ cups of the crumble mixture and set aside for the topping. press the remaining mixture evenly into the bottom of the prepared pan.

  9. Take your apples and place them uniformly over the bottom crust. sprinkle the reserved topping over the apples.

  10. Bake the crumble bars for 45 minutes, rotating the pan halfway through so that your bars cook evenly.

  11. Let cool in the pan on a cooling rack before slicing and serving. Enjoy!

 

* A 1:1 gluten free flour can also work well in place of all purpose flour
